YAMAHOUSHI

Yamagata, Rokkasen Brewery

A melody impossible for a single voice became a song when five united.
In Higashine, Yamagata, five breweries once stood separate under the basin’s calm sky. Then, their streams merged. Blending five histories and the warmth of five pairs of hands, a new presence began to breathe: Rokka Sen. Named after the Six Poetic Sages of the Heian era, it aspires to reach the heart through quiet verse.
At the brewery’s core lies a young boy’s resolve. Asked in middle school—”Will you carry this on?”—he did not hesitate. That instant of decision supports everything today, flowing like groundwater beneath the foundation.
Pour, and scenes unfold. One sake layers rice sweetness, blooming slowly. Another strikes like a desert wind, washing everything away in a sharp, clean vanish. It is astonishing that such distinct voices rise from one source.
Yet, in every bottle, Higashine’s water runs; Yamagata’s rice lives. Seemingly separate, their roots are one. This is true harmony.
A song renews with every singing. Its resonance changes with the listener’s heart. The sixth poet begins to sing only on the night you tilt your glass.
