To enjoy the taste of sake at its best, it is essential to control the temperature properly. Many of you may have been surprised by the rich flavors of sake tasted at the brewery. In particular sake, with the exception of aged sake, tastes best when stored fresh or at ice temperature. However, even in Japan, home refrigerators are often set at about 5 degrees, and long-term storage may cause the taste to change little by little. Ideally, all sake should be kept at minus 5 to 10 degrees.
Temperature control becomes even more difficult when exporting overseas. It is difficult to find a bonded warehouse for export that is minus 5 degrees. However, we spent a long time searching for the best Japanese warehouse and finally established a cold chain from the brewery to our customers in Thailand, which is controlled at minus 5 degrees. As a result, we are now able to deliver fresh sake to our customers in Thailand without any deterioration at all during transportation.
