Shiraito Brewery has a long history, beginning in 1855 and continuing to this day in Itoshima City, Fukuoka Prefecture. Today, Katsunori Tanaka, the 8th generation of the Brewery, is further refining the sake brewing techniques that have taken deep roots in this region and have been passed down from generations. The symbol of this is a sake called “Tanaka Rokujugo 65. The name refers to the history of the Tanaka family and the fact that the sake is brewed in a brewery in the Tambo (rice fields). And “Rokujugo” refers to the fact that the Yamadanishiki produced in Itoshima is polished to 65% and finished as Junmai sake.
Tanaka Rokugo is characterized by its mild, deep flavor and delicate aroma. This is due to carefully selected high-quality rice Yamadanishiki, a clean water source, and the traditional “Hanegi press” technique. Shiraito Brewery is the only one in Japan that uses “Hanegi press” the weight of giant trees and stones to press the sake must and carefully squeeze out the sake.
