Classic pairings: red meat, roast chicken, charcuterie, mushroom dishes and simple cheeses. Japanese cuisine: yakitori, chicken teriyaki, kamo rosu, grilled mushrooms and sukiyaki in a lighter style. Thai cuisine: gai yang, moo ping, mild larb gai and nua yang with restrained chili; the fresh fruit works best with savory grilled flavors.
