SABUROMARU II THE HIGH PRIESTESS is a Japanese single malt whisky from Wakatsuru Saburomaru in Tonami, Toyama. Made from heavily peated malt (50 PPM), it is distilled at the Saburomaru Distillery on the ZEMON pot still and is presented as a 700ml, 48% ABV release from the 2019 distillation, bottled in 2022 as a limited batch. The profile combines restrained, elegant smoke, soft malt sweetness, and citrus-fruit touches, with a clean medium body that keeps the peat character polished rather than aggressive.

Culinary affinity: Its balanced smokiness and soft texture pair well with grilled pork, charred shellfish, roasted chicken, mildly seasoned fish, mushroom dishes, and soft desserts with nut or vanilla notes. It also performs confidently as a chilled highball, where light carbonation opens the citrus and peat accents.
