This wine is a blend of several vintages which have benefited from prolonged aging in cellar before bottling. The result is a balance between the mineral freshness of the terroir and the aromatic complexity of the long maturation in vats and oak barrels. A Wine of Gastronomy, mineral, complex and powerful.

It is ideal to be served with crustaceans (shellfish), seafood platter, raw fish like sushi, goat cheese platter.
Vinification
Same method as in Champagne: fermented with native yeasts in tank for primary fermentation, secondary fermentation in the bottle. Then aged 30 months in bottle. Organic – Native yeasts – Low Sulphite – Vegan
