Pairing
Will easily pair with red meats, game and terrines. In addition, it is ideally suited to finer dishes such as a casserole of sweetbreads with cream.
Vinification
Harvested at optimal ripeness, bunches are destemmed and the grapes sorted a second time before fermentation, using the “vinification intégrale” method into demi-muids (500L oak barrels). Only natural yeasts are used. Then the wine rests for 24 to 30 months.
