Pairing

Classic pairings: scallops, shrimp, white fish, veal paupiettes, beurre blanc and gently creamy sauces. Japanese cuisine: grilled scallop, tempura, saikyo-yaki white fish, chawanmushi and crab dishes. Thai cuisine: grilled river prawns, poo pad pong curry in a mild style, steamed fish with lime and gai hor bai toey; avoid heavy chili oil.

Vinification

Fermentations in Burgundy barrels (from Domaine de la Romanée Conti) . Aging on fine lees for 2 months, then aging in tanks until bottling
