The nose is fine, delicate and deep, on blackcurrant (fruit and leaf), peony, with a hint of mint / peppery.
Taste
The palate is round, full-bodied but very soft, with violet in the background that gradually develops its intensity. A finish with soft and “gourmet” tannins, with a beautiful persistence on blackcurrant, violet, rose and pepper.
Pairing
Aperitif boards, tapas, a confit of pork shank or a goat cheese.
Vinification
Indigenous yeasts only, followed by maceration in stainless steel tanks for 2 weeks. No filtration, no added sulphite. Certified “Vin Méthode Nature”, which allows the cabernet franc to express itself in its purest and profound form, without any “make-up”.
