A complex wine, intense, elegant and perfectly balanced. Its length on the palate promises a long ageing potential .
Pairing
Meat dishes such as a herb and mustard crusted rack of lamb served with Provençal style vegetables. It is an ideal candidate for goat’s cheese, due to its freshness. It has the body required to partner a mature Comté.
Vinification
Fermentation lasts 4 to 5 weeks
at 24°C to ensure low extraction. Then aged in Burgundian 3 years old barrels from fellow winemakers in the Côte de Nuits and Côte de Beaune for 8 months.
