The Broker with No Wine of His Own In 1981, within the historic city of Reims in France’s Champagne region, a man sold his vintage Jaguar. His name was Bruno Paillard. Deeply versed in the trade as a Champagne broker (négociant), he possessed a profound understanding of the region’s finest offerings. Yet, despite his expertise and keen eye for exceptional wines, not a single bottle bore his own name. With the funds from selling his beloved car, Paillard founded his own maison. Champagne is a world long dominated by grandes maisons with histories stretching back centuries. For an independent house established after the war to achieve international acclaim was an exceedingly rare feat.
A Quiet Shift in Tradition Soon after founding his house, Paillard focused on transparency. In 1983, he began printing the disgorgement date on the back label of every bottle. This date, indicating when the Champagne underwent its final finishing step of removing the lees, serves as a crucial guide for consumers to understand its state of aging. At the time, no other maison disclosed this level of information. Committed to absolute purity, he used only the first pressing of the juice, strictly declining the second press or beyond. Starting in 1985, he also began building reserve wines using a method akin to a solera system. Rather than making grand proclamations, he shaped the character of the maison through a steady accumulation of deliberate choices at each stage of production.
“Nec Plus Ultra” Nothing Beyond N.P.U. takes its name from the Latin phrase “Nec Plus Ultra,” which translates to “there is nothing beyond this.” It is a prestige cuvée produced exclusively in years when climatic conditions are absolutely perfect. Since its inaugural vintage in 1990, only nine vintages have ever been released to the world. The 2009 vintage is remembered as a year blessed with abundant sunshine in Champagne, allowing the grapes to reach an ideal ripeness. For this N.P.U., Chardonnay and Pinot Noir are used in equal measure, carefully selected from six Grand Cru vineyards across the Côte des Blancs and the Montagne de Reims. The taut mineral “vertical axis” drawn from the chalk-rich soils of the Côte des Blancs elegantly intersects with the powerful fruit “horizontal axis” of the Montagne de Reims, creating a profoundly multidimensional structure.
Nurtured by Twelve Years of Silence Vinification takes place entirely in older, small oak barrels—never new ones—to ensure the delicate natural flavors of the grapes are not overshadowed by strong oak aromas. Following fermentation in the barrel and 10 months resting on the lees, the wine is aged meticulously in the bottle for over 12 years. This far exceeds the legal minimum aging period of three years, a long slumber that is built into the wine’s design from the very outset. As a testament to this meticulous craft, each of the 9,659 bottles and 379 magnums bears its own individual number.
The Legacy of a Visionary Broker Today, the maison is guided by Bruno’s daughter, Alice Paillard. Approximately 75% of their production is carefully exported to more than 30 countries worldwide. What began as an independent endeavor, funded by the sale of a vintage car, has over four decades steadily established a highly distinctive presence within the Champagne region.
