The attack is precise and smooth. Great aromatic coherence between nose and palate. Full flavour of yellow fruit mixed with star anise.

Pairing

This 2014 Blanc de Blancs is perfect with raw seafood and fish. Its intensity also goes very well with grilled or smoked shrimp, and even some meats like the Iberian pork with yuzu.

Vinification

This Blanc de Blancs is exclusively made from the first press of the great wines of the Côte des Blancs (Oger, Mesnil-sur-Oger, Cramant and Chouilly) of which 25% are vinified in small old oak barrels. It benefits from 8 years of aging on lees and 16 to 18 months of rest after disgorgement. With an Extra-Brut dosage of 3 g/L, it expresses a remarkable purity and complexity.
