Notes of cherries, leather, herbs and floral notes.

Taste

Fruity profile of red fruits. Pure, fruity, very shiny and tannins of great finesse. Well balanced, not too tannic, elegant acidic finish.

Pairing

Classic pairings: beef, veal, pasta, roasted vegetables, grilled poultry and casual meat dishes. Japanese cuisine: yakitori, chicken teriyaki, sukiyaki, grilled mushrooms and beef shigureni. Thai cuisine: gai yang, moo ping, mild larb moo and nua yang with restrained chili; its fruit-driven style works best with grilled savory flavors.

Vinification

10 months of aging, in barrels 20%, in tanks 80%. No added sulphite – Indigenous yeasts – Without enzymage, chaptalization, acidification, bonding or filtration. Organic & Biodynamic cultivation.
