This is a classic sake made by hand and carefully blended with Yamahai, unpasteurized sake. It retains the freshness of a unpasteurized sake, but also has the smoothness of a fire-roasted sake. The subdued aroma is more rustic, reminiscent of rice straw than fruitiness.
