Bruno Paillard Première Cuvée Extra-Brut M.V. is blended from the delicate first pressing only: 45% Pinot Noir, 33% Chardonnay, 22% Meunier. Up to half comes from a perpetual reserve that gathers twenty-five vintages since 1985. Fermentation is by plot, with around 20% in French oak. The wine rests over three years on the lees and another five months after disgorgement; dosage stays below 6 g/L. Pale straw, it shows a fine, silken bead, aromas of citrus, red berries, and brioche, and a chalk-driven, lingering finish.

Founded in 1981, the house tends 32 hectares across Grand and Premier Cru villages and vinifies each separately. In 1983 it began printing disgorgement dates on every bottle—now a reference for transparency.

Domaine Grand Veneur’s organically farmed Côtes du Rhône Rouge distills the south’s sun, wind, and stones. Led by Grenache with Syrah and Mourvèdre, it ferments in temperature-controlled vats with gentle extraction, then rests in concrete and large foudres to preserve purity. Vivid ruby; aromas of black cherry, raspberry, violets, licorice, and cracked pepper, with a savor of garrigue. Supple tannins frame a poised, dry finish.

The estate sits on the Rhône’s right bank near Orange; a family domain shaped by the Mistral and heat-holding river pebbles. Trivia worth knowing: “Grand Veneur” recalls the royal master huntsman—heritage mirrored in the cellar’s disciplined restraint.

■ LE FAY D’HOMME Je t’aime mais j’ai soif
-A Biodynamic Loire White of Clarity, Salinity and Poise

From the biodynamic, family-run Domaine Le Fay d’Homme in Monnières, Je t’aime mais j’ai soif is a certified organic Vin de France white shaped by the Atlantic edge of western Loire. The blend—Melon de Bourgogne with Sauvignon and Sémillon—ferments in tank to safeguard purity. Aromas suggest lime zest, white peach and hawthorn; the palate is bone-dry, bright and saline, the texture silky yet taut, finishing on clean stone.

Five generations of the Caillé family farm roughly 25 hectares on gneiss and gabbro; since 1986, vigneron Vincent Caillé has pursued organics and Demeter-certified biodynamics. The label’s playful name—“I love you, but I’m thirsty”—signals the house philosophy: generosity without excess, clarity over artifice, and a discreet elegance that invites, then refreshes.
