Wild strawberries & blackcurrants. Notes of blood orange and pink grapefruit emerge with intensity. On aeration, accents of licorice and Sichuan pepper.
Taste
The attack is lively as fruity and salty as the smell. The finish is long and flies towards cocoa powder and dried fruit.
Pairing
Slightly spicy and slow-cooked dishes; lamb shoulder confit with honey and sweet spices, or red mullet fillets with saffron cream. Dessert, red fruit tart, vanilla crème brûlée, dark chocolate beggars.
Vinification
Made from the first press, the purest, with 25% of the assemblage vinified in small old oak barrels to bring a touch of complexity and maturity. Aged for 7 years in the cellar, then resting for at least 18 months
after disgorgement, to develop a great expressiveness and beautiful tonicity. The Extra-Brut dosage – 4.5g/L – highlights the purity of the 2015 Assemblage.
