This wine is a blend of several vintages which have benefited from prolonged aging in cellar before bottling. Pairing

It is ideal to be served with crustaceans (shellfish), seafood platter, raw fish like sushi, goat cheese platter.

Vinification

Same method as in Champagne: fermented with native yeasts in tank for primary fermentation, secondary fermentation in the bottle. Then aged 30 months in bottle. Organic – Native yeasts – Low Sulphite – Vegan
