Light nose feeling but maintained impressive level of depth & complexity: fresh strawberries, perfumes raspberries, some crushed violet, white pepper and clove.

Taste

Ripe red cherry, black fruit, licorice, violet, earthy, pepper & barnyard funk. Long length with a fruity yet earthy finish. Has the concentration to age.

Pairing

Classic pairings: red meat, game, lamb, duck, wild herbs, slow braises and firm cheeses. Japanese cuisine: wagyu steak, sukiyaki, kamo rosu, beef tongue and miso-marinated meat. Thai cuisine: massaman nua, nua yang, lamb stew and slow-braised beef with warm spice; avoid sharp chili-lime heat.

Vinification

30 months of aging in casks and casks. Organic – Biodynamic – No added sulphite – Indigenous yeasts – Without enzymage, chaptalization, acidification, bonding or filtration.”
