Fragrance

Nose of ripe, black fruits – black cherries, black & blue berries – plums.

Taste

A complex wine, intense, elegant and perfectly balanced. Its length on the palate promises a long ageing potential .

Pairing

Classic pairings: roast lamb with thyme and mustard, duck breast, game birds, grilled beef, osso buco, beef tongue and aged cheeses. Japanese cuisine: wagyu steak, sukiyaki, charcoal-grilled beef tongue, duck roast and rich soy-based braises. Thai cuisine: massaman beef or lamb, gapao nua and mild Isaan-style grilled beef; avoid very spicy nam prik or sharp chili heat.

Vinification

Fermentation lasts 4 to 5 weeks at 24°C to ensure low extraction. Then aged in Burgundian 3 years old barrels from fellow winemakers in the Côte de Nuits and Côte de Beaune for 8 months.”
