Vinification
The wine rests in barrels on fine less for about 9-11 months. It’s then bottled and aged on lees for 42 months for the secondary fermentation (prise de mousse). Dosage of 4g/l (extra brut). Certified organic and biodynamic.
No added sulphite – Indigenous yeasts – Vegan.
