Taste

Juicy red ripe fruit – strawberry –, apple. Medium acidity, fine bubbles. 2015 shows these mineral notes with a bit more roundness and generosity, coming from a solar, warmer year.

Classic pairings: oysters, caviar, shellfish, raw or grilled seafood, white fish, young cheeses and delicate poultry. Japanese cuisine: sushi, sashimi, tempura, grilled sea bream, crab, scallop and yuzu-ponzu dishes; the bright acidity keeps seafood clean. Thai cuisine: steamed or grilled prawns, pla kapong neung manao, mild seafood salad and lemongrass-forward dishes; keep chili moderate to protect the wine’s mineral finish.
