An orchestra of flavors, with layers of red berries, crisp apples and a subtle minerality, all balanced by a spine of racy.

Pairing

A perfectly made champagne, in an “old- fashioned” style, that can be enjoyed with another great classic – poultry with yellow wine and morels. But also, crustaceans, fatty fish, pork.

Vinification

Aged 5 years on lees, then 11 months in oak barrels. 614 bottles produced in 2016. Biodynamic cultivation.
