It was in 1998 that David discovered the world of wine and the fascinating job of winegrower. With a strong need for nature and a high school diploma in hands, he began to settle in 2000. Now the estate has reached 8 hectares, located in the municipalities of Solutré and Prissé, where David produces three appellations: Mâcon Villages, Saint-Véran and Pouilly Fuissé.
In order to create local and authentic wines, David’s work is minimalist in the vineyard as in the cellar and, above all, identical for all appellations. It only intervenes when necessary to obtain, first, grapes at optimal maturity and then, wines that simply express their own natural qualities. Each wine tells its own story.
The consecration of this hard work was the official passage in Pouilly Fuissé Premier Cru in 2020, official recognition by the INAO and its validation by ministerial decree on November 21, 2020.
“Telling a DAVID FAGOT wine without making the olfactory and gustatory experience is a challenge, so much is the involvement of the winemaker in the choices made during the process of elaboration, from the vine to the glass. Even if the characteristics of the appellations are known – minerality, finesse, elegance, aromatic complexity – their expression at Domaine DAVID FAGOT marks the existence of an energy specific to each Cuvée, which you can discover during a personalized tasting” says David.
