Ishikawa, Kano Brewery

Founded in 1819, JOKIGEN brewery continues to produce local sake while preserving the local culture as landowners for generations in Kaga, overlooking the sacred Mt. Hakusan. Protecting the “white water well” named after Rennyo Shonin, and the quality of the sake brewed with that clear water has improved with the addition of Japan’s top brewer, Naohiko Noguchi, nicknamed “the god of sake brewing.” It has a reputation for Yamahai construction. “Junmai Daiginjo Kiss Of Fire” has received high praise internationally and is considered an honorable sake recognized around the world, including being selected at the Nobel Prize Nightcap Party. Shikano Sake Brewery’s motto is to be committed to people, rice, and water, and JOKIGEN makes sake using small amounts of rice that we grow in-house.Even after the Noguchi Toji retired, our young brewers continue this tradition.
