BORN Junmai Daiginjo Non-filter Nama-Genshu is produced using the nakadori (middle-cut) method, extracting only the centre fraction of each pressing. Brewed from 100% Yamada Nishiki rice from Hyogo’s Special A district and polished to 50%, it is cold-matured at −10°C for one year or more, then bottled unfiltered and unpasteurised (nama genshu) — meaning it retains the full vigour of fresh-pressed sake. Alcohol is naturally higher at 17% due to the undiluted (genshu) nature of the product.

Important — refrigeration required: This sake is unpasteurised and must be kept refrigerated at all times.

Culinary affinity: The bold, full-bodied character associates naturally with rich preparations — dishes using butter, cream, cheese, and olive oil, as well as cheese plates and richer Western cuisine.
