Fragrance

Highly aromatic with subtle aromas of red fruits and berries.

Taste

Expressive and generous. It develops superb notes of small red fruits (red berries), biscuits, pastry cream. The palate is both lively and creamy. As a wine on the fruit, it will make a sensation as an aperitif or dessert.

Pairing

Appetizers and snacks, crustaceans (shellfish), seafood platter, raw fish like sushi, poultry, lean fish, goat cheese platter, red fruits desert.

Vinification

Same method as in Champagne: fermented with native yeasts in tank for primary fermentation, secondary fermentation in the bottle. Then aged 20 months in bottle.
