Today, I would like to talk about a very special type of sake: non-filtered, unpasteurized sake = Muroka-Nama-Genshu. As the name says, this sake is a type of sake that is bottled without filtering or any heat treatment (“pasteurization”). Why is this special process so highly appreciated by sake enthusiasts?

Preservation and serving
Because unfiltered, unpasteurized sake is unheated, it must be carefully kept, especially when stored. Refrigeration is usually recommended, and once opened, it should be enjoyed as soon as possible because freshness is essential. Because of this condition, it was not easy to enjoy unfiltered, unpasteurized sake overseas. However, our company has established a -5°C cold chain from the brewery to Thai restaurants, allowing us to offer the same quality sake in Thailand that we enjoy in Japan.
Adjustment of alcohol content through natural fermentation
Recently, the alcohol content of nama sake is adjusted only by natural fermentation, without adding water. This is within the natural limits of alcohol that yeast can produce and is finely regulated by temperature control, yeast selection, and the quality of the ingredients. This method produces a juicy sake with a rich, full flavor, even with a low alcohol content.
