Shiraito Sake Brewery brews sake using the few old -traditional techniques in the country, “Haneki squeezed”. This technique has been continued since the Edo period. With this slow compression method, we create a clearer and delicate sake without squeezing the savory taste. This technique reflects the philosophy of sake brewing, spending more time and effort, unlike the compression by machine adopted by many modern sake breweries. In this way, Shiraito Sake Brewery uses high -quality raw materials such as Yamada Nishiki from the local Itoshima to make luxurious sake that combines tradition and modern technology.
