Safe Handling of Nama-sake

A Guide for Sake Enthusiasts

Nama-sake is especially popular among sake connoisseurs for its fresh flavor and delicate gassiness. However, some caution must be taken when opening the bottle to enjoy this delicious sake. Since bottles of raw sake contain carbon dioxide gas produced during the fermentation process and incorrect handling can lead to accidents, we have compiled a list of points to ensure safe enjoyment.

Caution when opening the bottle
In 720ml bottles, for example, which feature a plastic inner cap and an aluminum crown head, the inner cap may jump out of the bottle suddenly and vigorously when the aluminum cap is opened. To prevent this, it is important to follow the procedure according to the label: “Open the bottle slowly while venting the gas. Sake should be chilled before opening. The key is to open the bottle when it is well chilled in the refrigerator and avoid any vibrations. Sake that is warm or after being subjected to vibration is more likely to pop the inner cap. It is also important to keep the bottle after opening. Store the opened bottle in the refrigerator in an upstanding position and secure it with a rubber band by placing a piece of plastic wrap over the cap, just to be safe.

Appeal of Nama Sake
Nama-zake is not heat-treated, so the original fresh aroma and taste of sake can be enjoyed. The color is clear and the aroma is green apple and pear-like. In the mouth, it is characterized by a very fresh taste with fine gasiness, juicy sweetness, and a fresh acidity. It is light on the throat and has a clean finish with a hint of bitterness lingering in the aftertaste.

Survey results from the National Consumer Affairs Center
A survey by the National Consumer Affairs Center confirmed that there is a danger of the cap jumping like champagne in nama sake that has not been heat-treated, such as nama nigori sake and raw nakakagumi sake. In particularly cases have been reported where the inner cap has jumped out simply by removing the outer stopper when the bottle is opened after being stored at room temperature.

Pay attention to these points when opening a bottle of nama-zake and be prepared to enjoy it safely and deliciously. When handled properly, nama-zake can offer some of the most impressive flavors in sake. Nama-zake is a very nice sake.
